With warmer weather approaching we gear up for some of our favorite summer foods. It's made with raw cabbage so it's a great way to add fresh veggies to your diet..especially with kids! Homemade vinaigrette dressing adds a special touch...and you can mix it up in a matter of minutes. My Mother in law gave me the recipe several years ago...I tweaked it a bit by adding garlic to the dressing. She usually serves it as a side dish. We eat it as a main course with some crusty bread. It's one of my favorite salads!
Easier than pie to prepare
Chicken Cole Slaw Oriental
For four: (I double or triple this for the 8 of us...we like leftovers)
3-4 boneless, skinless chicken breasts (cooked and cubed or torn into bite sized pieces) I boil mine and then chill it.
2 tblsp. toasted sesame seeds (optional...I usually don't put these in...I always forget!)
1/2 cup (appx) sliced, toasted almonds
1/4 cup (appx) rice noodles
1 bag shredded cabbage with radishes and carrots (easy way out & I take it every time) or 1 head cabbage chopped
green onions- a few chopped, if desired (I forget these all the time too!)
Dressing
2 tbsp sugar
1/2 cup oil
1 tsp salt
1 tsp Accent
1/2 tsp pepper (I like fresh cracked...it looks pretty too!)
3 tbsp vinegar
good dash garlic powder (or to taste)
Mix in leak proof container, cover and shake well. Chill and shake well before serving.
When ready to serve, mix salad ingredients and toss with vinaigrette to coat.
I served the Cole Slaw in my favorite Spode transferware in the Byron pattern.
I put the vinaigrette dressing in a liquor decanter I inherited from my Great Aunt & Uncle and topped it with a pretty silver and clear beaded wine bottle cover from Always Elegant. I love this online site...they have lots of different colors of bottle/candle covers to choose from, plus carry a wide assortment of hand beaded tablewares...bowls, chargers, coasters, napkin rings and more.
I found the doily from Priscillas Lace and Linens. Isn't this the neatest shape? I LOVE it! I used it as a placemat and layered it over a green tablecloth so the green shows through the brown lace. It looks so pretty with my Spode Byron! Priscilla carries the most humongous selection of Heritage Lace and the prices are great. This doily was less than what most placemats cost! If you like pretty lace...this is the place to go. Heritage Lace Heaven is what it is. I think she's got well over 750 Heritage Lace items!
